Besides the human voice, there is a huge variety of other instruments used to "back up sing" and make the sound bigger. Those instruments used to enhancing harmony qualities are the mandolin, bass, autoharp, guitar, piano, drums and drum sets and other stringed instruments. These instruments also help rely the message. 
In addition to the organ, regular pianos are played to make gospel music. These instruments are often used to accompany the words of slow gospel songs, especially when it is a solo backed up by the choir.
